On September 29th, Michelin-starred chef Oliver Glowig, Partner Chef at The Ritz-Carlton, Toronto arrived from Rome to host a finely curated 5 course, authentic Italian menu. Served at the TOCA Trattoria, was paired with wine selected by sommelier Élyse Lambert.
The five-course menu began with a crispy egg served with zucchini creema, kumquat and topped with black truffle. For the second course, the gnocchi’s savoury flavour was found in the bottarga and the third course was squab was paired with the rich foie gras. The desert portion of the menu was a two-part affair with a fruit and vegetable milk cream dish first and a goat cheese mousse and raspberry sorbet served on a sable cookie.

While Glowig was born in Germany, he found his flavours in Italy and is recognized as one of Italy’s top restaurateurs. After receiving his first Michelin star at Acquarello in Munich, Chef Oliver became Executive Chef at the two Michelin star restaurant L’Olivo, located in the Capri Palace Hotel & Spa. Chef Oliver is based in Rome where he also oversees Primavera Restaurant in the Ritz Carlton Bahrain, La Locanda by Oliver Glowig Saas-Fee Switzerland. He currently serves as Partner Chef at TOCA to bring his expertise into every item on the menu.
The recently re-designed TOCA designed their menu in collaboration with Glowig. Bringing a classic Italian trattoria to the heart of Toronto’s Entertainment District, TOCA elevates locally sourced, seasonal ingredients into homemade pasta dishes, seafood-forward recipes and dishes complemented by aged selections from the cheese cave.
